| Stuffed Meatloaf with Spaghetti |
Ingredients:
For the Meatloaf:1 1/2 pounds ground beef1 cup breadcrumbs1 egg1/2 cup grated Parmesan cheese1 small onion, finely chopped2 cloves garlic, minced1/4 cup chopped parsleySalt and pepper to taste1 cup marinara sauceFor the Spaghetti:8 ounces spaghetti1 cup marinara sauce1 cup shredded mozzarella cheeseInstructions:
Prepare the Spaghetti:
Cook the spaghetti according to package instructions. Drain and toss with 1 cup of marinara sauce and mozzarella cheese. Set aside.Make the Meatloaf Mixture:In a large bowl, combine ground beef, breadcrumbs, egg, Parmesan cheese, onion, garlic, parsley, salt, and pepper.
Mix until well combined.Assemble the Meatloaf:Preheat your oven to 375°F (190°C).On a large piece of parchment paper or plastic wrap, flatten the meatloaf mixture into a rectangle about 1/2 inch thick.Spread the spaghetti mixture evenly over the meatloaf rectangle.Carefully roll the meatloaf around the spaghetti, using the parchment paper or plastic wrap to help you. Make sure to seal the edges well.
Bake:
Transfer the stuffed meatloaf to a baking dish, seam side down.Cover with the remaining marinara sauce.Bake for 1 hour or until the meat is cooked through (internal temperature should reach 160°F/71°C).Serve:Let the meatloaf rest for 10 minutes before slicing.Serve warm, with extra marinara sauce if desired.
